Copycat Onion Wrapped Flying Dutchman

Copycat Onion Wrapped Flying Dutchman

This copycat onion wrapped flying Dutchman is essentially a cheeseburger served in an onion "bun" that is tender, crisp, and sweet, and pairs perfectly well with the richness of the meat.

Steps

  1. Cut 4 1/2 -inch thick slices from the center portion of the onion and discard the smaller ends for another use. Divide beef into 4 portions and form each portion into a very thin patty.  Season patties with salt and pepper.
  2. Heat a large skillet over medium-high heat. Working in batches, add 2  onion slices to the pan and cook, undisturbed, about 2 minutes. Add 2 patties and continue to cook until golden brown, 2 to 3 minutes. Flip onion and burger patties and continue to cook until golden brown pressing the burger as it cooks.
  3. Add 2 cheese slices to the top of one onion slice and both burger patties. Place one burger on the cheese-topped onion slice and top with the second burger patty. Place remaining onion slice over burger and press down. Flip burger and cook 1 to 2 more minutes. Remove from pan and set aside. Repeat with remaining onions, burger patties and cheese.
  4. Combine mayo, ketchup, mustard, and pickle relish in a small bowl and stir well.  Serve with burgers.

Frequently asked questions

Why do my onion slices fall apart in the pan?

The rings separate once the onion softens. Cutting the slices a full half inch thick from the centre of a large onion, as the method says, gives each one enough structure to hold. Slide a spatula right under the whole slice when flipping rather than lifting from one edge.

Is this recipe low carb or keto?

Yes, there is no bun at all, which is the point of it. The onion slices take the place of bread, so the only carbohydrate comes from the onion itself and the ketchup and relish in the sauce.

What can I use instead of American cheese?

Any cheese that melts quickly and smoothly, such as mild cheddar or a young provolone. American cheese is used because it melts in the minute or two the burger has left in the pan, so a firmer cheese may need a lid over the pan to help it along.

Can I make the burger sauce ahead of time?

Yes, and it improves for sitting. The mayonnaise, ketchup, mustard and relish can be stirred together and kept covered in the fridge for several days, so it is worth making more than one batch needs.

How do I stop the burger falling apart when I eat it?

Press it down firmly once the top onion slice goes on, which is what the method asks for, and let the cheese melt properly since it acts as the glue between the layers. Serving it straight from the pan while the cheese is still soft helps too.

What do you serve with an onion wrapped burger?

Something you can eat with your hands, since this one is already messy, so fries or crisps and a pickle on the side. A plain slaw works if you want to keep the whole plate low carb.
