Simple Turkey Chili

This turkey chili recipe is made with ground turkey, tomatoes, kidney beans, and spices that make it super flavorful. Even better on the second day!

  1. Gather all ingredients.
  2. Heat oil in a large pot over medium heat. Add turkey; cook and stir until evenly browned, 6 to 8 minutes. Stir in onion and cook until softened.
  3. Add water; stir in tomatoes, kidney beans, and garlic.
  4. Stir in chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper.
  5. Bring to a boil. Reduce heat to low and simmer, covered, until flavors blend and chili thickens slightly, about 30 minutes.

Why are the kidney beans mashed?

Mashing them is what thickens the chili. There are 2 cups of water in this pot, and the starch from the crushed beans body it out over the 30 minute simmer instead of leaving a thin, soupy sauce. Leave a few beans whole if you want some texture, but mash most of them.

Can I use ground beef instead of ground turkey?

Yes, swap it pound for pound and the method is unchanged. Beef renders far more fat than turkey does, so spoon most of it off after browning or the chili turns greasy. Everything from the water onwards stays exactly the same.

How do I know the turkey is browned enough?

Cook and stir it for 6 to 8 minutes until no pink remains and the meat is evenly coloured throughout. Break it up with a spoon as it cooks so it browns in small pieces rather than steaming in one mass. The onion goes in after that and softens in the same pot.

Is this chili spicy?

It is mild to medium: 2 tablespoons of chili powder gives warmth and depth rather than heat, and the 1/2 teaspoon of cayenne is what actually bites.
